Job description: Cookbook Author and Happy Food Ambassador

Favorite dish to serve at a dinner party: Gluten free homemade pizzas with lots of veggie toppings! It’s always fun and everybody loves it! I also make lots of fresh salads for starters that everyone can mix and match. Healthy food should be fun, and I love to see everybody digging in and enjoying it! For dessert I love to make a juicy crumble or my favorite recipe, my raw caramel slices. So yum!

Favorite skin food ingredient and why: Blueberries, leafy greens, and lots of water! They are packed with nutrients that are great for the skin. The blueberries have lots of antioxidants and the leafy greens are packed with vitamin A, E, C, and zinc… which is all great for good skin health. Water of course for hydrating the skin and detoxing the body.

Must-have cookbook: Besides mine;) I love the cookbooks of Jessica Sepel. Very informative, balanced, and delicious.

Top three kitchen supplies you can’t live without: Airfryer, mixer, and good knives.

Three things you always keep in your refrigerator: Oat milk, pickles, and tomatoes.

Favorite online shop for kitchen supplies and / or specialty food items: I don’t buy that much online. I love to go to the market and buy fresh veggies and fruits. I don’t really use any products that you couldn’t find in a good organic shop or supermarket.

Go-to quick, healthy meal: Shakshuka! Love this oriental dish so much! It’s a base of pureed tomatoes, sliced tomatoes, onion and garlic, cumin, and an organic egg. So simple and so good! Perfect for a cozy night in with a slice of super dark bread. Also, it reminds me of my chosen home which is Tel Aviv. This is a very typical local dish.

Favorite healthy treat: My homemade raw caramel slices.

Skincare mantra: Beauty from the inside. Good products are important, but stress, sleep and nutrition have an even bigger impact on skin health. Nothing can beat plant based, natural and homemade food, lots of water, fresh air and eight hours of sleep.

Eat this recipe for: A healthy upcoming Hanukkah Holiday:). Or just for some super delicious and natural latkes. These are amazing and super easy potato and sweet potato patties that are vegan and gluten free. You can even freeze them! This is such a great recipe for any dinner since you can eat them with anything, and it will always be delicious.

Recipe: Potato and Sweet Potato Latkes

Ingredients:

2 large potatoes

2 sweet potatoes

1 onion

2 tbs starch

oil to fry

To serve:

Salt and pepper (to taste)

250 g vegan curd

1 handful fresh herbs

2 tsp paprika powder

Instructions:

Peel the potatoes and sweet potatoes.

Grate the potatoes and sweet potatoes by hand or with a food processor and place everything into a kitchen towel.

Rinse all the liquid out and pour the grated pieces into a mixing bowl.

Chop the onion and add to the potatoes.

Add the starch and mix.

Pour some oil into a pan and heat it up

Form round latkes with your hands and fry them in the pan until both sides are golden and crunchy. You can also bake them in the oven at 180°C but they do get less crunchy, so I prefer to fry them.

Pour the curd into a bowl. Chop the herbs and add them to the curd. Add the paprika and salt and mix.

Serve the latkes with curd and add salt and pepper to taste.
