holi (mane) Easter Collagen Cookies

Cookie Ingredients (makes ~12-16 cookies)

  • 1 ¾ cups almond flour
  • ¼ cup coconut flour
  • ¼ tsp baking soda
  • Pinch of sea salt
  • ¼ cup coconut oil, melted
  • ¼ cup maple syrup or honey
  • 1 egg (or flax egg for vegan option)
  • 1 tsp vanilla extract
  • Zest of 1 lemon or orange (optional for a springy flavor)
  • 2 scoops holi (mane) collagen powder

Collagen Icing Ingredients

  • ¾ cup powdered coconut sugar (or powdered monk fruit sweetener for sugar-free)
  • 1–2 tsp nut milk (almond, oat, etc.)
  • ½ tsp vanilla extract
  • 1 scoop holi (mane) collagen powder
  • Natural food coloring

Instructions:

1. Make the dough

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together almond flour, coconut flour, baking soda, salt, and holi (mane).
  • In a separate bowl, whisk together melted coconut oil, maple syrup/honey, egg, vanilla, and zest.
  • Combine wet and dry ingredients to form a soft dough. Chill for 15–20 minutes for easier handling.

2. Shape and bake

  • Roll out the dough between two sheets of parchment to about ¼-inch thickness.
  • Use Easter cookie cutters (bunnies, eggs, flowers) to cut shapes.
  • Place on baking sheet and bake for 8–10 minutes, until edges are golden. Let cool fully.

3. Make the icing

  • In a bowl, whisk together powdered coconut sugar, holi (mane), vanilla, and just enough nut milk to reach a thick glaze consistency.
  • Divide and color with natural food coloring.
  • Pipe or spoon onto cooled cookies.
