holi (mane) Easter Collagen Cookies

Cookie Ingredients (makes ~12-16 cookies)
- 1 ¾ cups almond flour
- ¼ cup coconut flour
- ¼ tsp baking soda
- Pinch of sea salt
- ¼ cup coconut oil, melted
- ¼ cup maple syrup or honey
- 1 egg (or flax egg for vegan option)
- 1 tsp vanilla extract
- Zest of 1 lemon or orange (optional for a springy flavor)
- 2 scoops holi (mane) collagen powder
Collagen Icing Ingredients
- ¾ cup powdered coconut sugar (or powdered monk fruit sweetener for sugar-free)
- 1–2 tsp nut milk (almond, oat, etc.)
- ½ tsp vanilla extract
- 1 scoop holi (mane) collagen powder
- Natural food coloring
Instructions:
1. Make the dough
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together almond flour, coconut flour, baking soda, salt, and holi (mane).
- In a separate bowl, whisk together melted coconut oil, maple syrup/honey, egg, vanilla, and zest.
- Combine wet and dry ingredients to form a soft dough. Chill for 15–20 minutes for easier handling.
2. Shape and bake
- Roll out the dough between two sheets of parchment to about ¼-inch thickness.
- Use Easter cookie cutters (bunnies, eggs, flowers) to cut shapes.
- Place on baking sheet and bake for 8–10 minutes, until edges are golden. Let cool fully.
3. Make the icing
- In a bowl, whisk together powdered coconut sugar, holi (mane), vanilla, and just enough nut milk to reach a thick glaze consistency.
- Divide and color with natural food coloring.
- Pipe or spoon onto cooled cookies.
