Job description: Currently a Sustainable Business & Innovation master student and I have a background in Environmental Sciences and Political Science 

Favorite dish to serve at a dinner party: I always like to make tacos since they are so easy to veganize. Simply replace the ground beef with vegan ground beef crumbles, add some beans, spices, bell pepper, guacamole, corn, cilantro, and there you go: delicious tacos that everyone will love. 

Favorite skin food ingredient and why: I don’t really have a particular favorite skin food ingredient because I think eating a diet with a lot of variety ultimately leads to a healthy skin. I simply tend to go for foods that are high in antioxidants and healthy fats such as avocado, acai, every other fruit, and leafy greens.  

Top three Instagram accounts for inspiration: 

@yaknowme_hitomi When I watch her videos, I get inspired to be the best version of myself.

@tokyopony She makes traditional Japanese dishes but veganizes them. Japan is on the top of my travel destination list but recreating her recipes is the closest I’ll get to Japan for now.

@lahbco His video editing style and recipes are just so original. Definitely have a lot of his creations saved.  

Must-have cookbook: Vegan Eat by Shannon Martinez and Mo Wyse. 

Top three kitchen supplies you can’t live without: I can’t live without my blender! I almost need it every day to make smoothie bowls. Also, a food processor is a must since I make a lot of no-bake desserts. Lastly, I would say my air fryer. It just makes the vegetables perfectly crispy and doesn’t take as long as an oven.  

Three things you always keep in your refrigerator: Berries, dairy free yogurt, and hummus.  

Favorite online shop for kitchen supplies and / or specialty food items: I do not really shop online anymore, but I used to order a lot of vegan snacks that I couldn’t buy in the Netherlands from Iherb. 

Go-to quick, healthy meal: Any type of curry with loads of vegetables and tofu. 

Favorite healthy treat: I can always go for a slice of healthy banana bread with any type of nut butter 

Skincare mantra:  Do your daily Gua Sha, use retinol and don’t forget SPF!

Recipe: Chocolate Maca Oats

Ingredients:  

1/2 cup oatmeal

1/2 chopped banana

1 cup almond milk

1 tablespoon cacao powder

1 tablespoon chocolate protein 

1 teaspoon maca powder

1 tsp sweetener of choice

1/8 teaspoon salt

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon 

Instructions

Bring the oats, milk, cinnamon, and salt to a boil. Reduce to a simmer. Add the chopped banana and cook until the oats are thick. Turn off the stove and add the cacao, maca, protein, vanilla and sweetener and stir until everything is combined. Add your favorite toppings and enjoy!
