Recipe: Spicy Baked Buffalo Cauliflower Wings

Serves 2/ 30 minutes

Ingredients:

1 large cauliflower

For the batter:

½ cup plus 2 tablespoons (150ml) plant milk

¾ cup (100g) gluten free flour

1 tablespoon smoked paprika

2 teaspoons chili flakes

2 cloves garlic

1 teaspoon cumin

½ - 1 teaspoon salt

½ - 1 teaspoon black pepper

Optional: 1 tablespoon sesame seeds to sprinkle before baking

Instructions:

Put the oven on to warm up 350 F/ 180 C.

Finely chop or mince the garlic.

Wash and cut bitesize florets from the cauliflower.

Thoroughly dry the cauliflower, this will help the batter stick to the florets.

Mix up the batter 

Dip the florets in the batter to coat them and place on a lined, lightly greased baking sheet.

Sprinkle sesame seeds on coated cauliflower buffalo wings.

Cook for 20 minutes, turning after 10 minutes.

Serve these spicy cauliflower buffalo wings with vegan garlic mayo: a small bowl of mayonnaise and 2 tablespoons of vegan yogurt mixed with a finely chopped or minced clove of garlic.
