Recipe: TART CHERRY VANILLA CREAMSICLES

They’re vegan, low in sugar and are sure to hit the spot this summer.

Fun fact, if you eat these before bed they may help with your sleep as tart cherry juice contains melatonin! But don’t let this deter you from eating these anytime of the day!

Ingredients:

Popsicle molds (I got mine off Amazon)

1/2 jar of tart cherry juice (I used RW Knudsen)

1 can of full fat coconut milk (left in the fridge overnight)

3 Tbsp Monk Fruit

Instructions:

Put your can of coconut milk in the fridge overnight before you plan to make these.

Pour your tart cherry juice into a bowl with 1 tbsp of monk fruit (you can omit or use honey/maple syrup/coconut sugar instead if you’d like)

Open the cold can of coconut milk and spoon out the full fat coconut cream, which will be sitting on top and separated from the liquid coconut water, into another bowl.

Mix your coconut cream with 2 tbsp monk fruit.

Add the liquid coconut water to the bowl of tart cherry juice

Pour a small amount of the cherry juice in the bottom of each popsicle mold

Spoon out a spoonful of the coconut cream and place on top

Pour more juice in, then add more cream on top, keep doing this until the molds are full to the top. This is what will give you the tie-dye effect!

Pop them in the freezer and enjoy!!
