Eat this for: A modern and light take on a warm fall favorite. Delicata squash is a great source of potassium, fiber, and contains magnesium and vitamin C.

Where do you find recipe inspiration? All over really. Travels, experimenting with new foods and flavors, mixed with family favorites. Both my parents are incredible in the kitchen too. I mainly think about nourishing my body with good foods, beautifying and healthy foods, and then bringing them to life. I can kind of take anything in the fridge and make it work, as opposed to fancy dishes. I love Athena Calderone (@eyeswoon) because she really considers the whole experience of food and entertaining, the décor, design, music, lighting – everything. And I just finished watching Yotam Ottolenghi on Masterclass and loved his use of vegetables, fresh herbs, spices and cooking techniques. I learned so much.

Dream dinner guest to cook for: Lately, it’s been just having my whole family together! With travel restrictions and some of us in Miami and Toronto, I’m just looking forward to cooking all together and enjoying a nice long meal with lots of laughs.

Favorite skin food ingredient and why: All fruits and vegetables, really. Their beautifying effects are undeniable. About 3-4 times a week I make a green smoothie, which I’ve been doing for about 8 years. When I started that, along with eliminating gluten from my diet, the effects on my skin were incredible. Clearer skin, better energy, waking up fresher in the morning – it’s all connected.

Must-have cookbook: Truthfully, I have so many beautiful cookbooks that I love to keep in my kitchen, but I rarely follow recipes to a T. I love the visuals and inspiration, and then try my own version.

Kimberly Snyder’s The Beauty Detox book did really influence me though, almost 10 years ago, in terms of the way I look at food for beauty, health and energy benefits. Her glowing green smoothie recipe is what inspired me to start making my own version.

Go-to quick, healthy meal: A big salad with lots of greens and some roasted veggies (I like to keep some in the fridge during the week), a little tahini or kimchi, and a few seed crackers to break up into it for crunch.

Skincare mantra: Do it early, do it often! It’s really about just keeping it consistent. And a Gee Beauty facial once every few months for advanced results. Also, that diet and digestion play as big of a role as your skincare.

Recipe: Roasted Delicata Squash, inspired by @eyeswoon. She made this dish and I just had to try it.

| Vegetarian | Gluten Free | Serves 4 | Total Time: 45 minutes | Opt for Organic Ingredients

Ingredients:
• 1 Delicata Squash
• 1-2 tablespoons Olive Oil
• 1 tablespoon Honey
• Grated Fresh Pepper to taste
• Garlic spice to taste
• Chili Powder to taste
• 1/3 cup white wine / champagne vinegar • Golden raisins / cranberries / pine nuts
• Fresh parsley
• Pink salt to taste
• 1 Juicy lime

Instructions:
Step One: Wash then slice the squash into about 3/4 quarter pieces.

Step two: Deseed + scoop out the insides with a table spoon, scraping the edges for a clean finish.
Step Three: Season with 1-2 tablespoons of olive oil, 1 tablespoon of honey, a little grated fresh pepper + garlic & a touch of chili powder if you like a little kick!

Step Four: Mix and lay flat on the baking sheet. Roast for 15-20 minutes at 375 degrees, flipping over once when they are a golden brown tone.
Step Five: For the refreshing light sauce/dressing, mix or simmer 1 juicy lime (or 2 if not as juicy), a tablespoon of honey, 1/3 cup of white wine or champagne vinegar. Add a touch more chili.
Step Six: Dress with golden raisins, cranberries or pine nuts (whatever you like) + fresh parsley and course pink salt to taste.
