AIP Friendly-ish Cauliflower Caviar Latkes

Eating healthy doesn’t have to be boring. It’s still possible to indulge in your favorite foods, while nourishing your body at the same time. Here we share clean versions of delicious recipes that will leave you feeling and looking incredible and not to mention, insanely satisfied!

I love making latkes during Chanukah, but nightshades like potatoes and inflammatory canola oil cause an autoimmune inflammatory response, so I make a healthier option. I hope you love these as much as me!  Also, check out why you should avoid canola oil here

Ingredients (makes 6)

3 bags packaged cauliflower rice, cooked according to directions

1 cup arrowroot powder

3 organic free range egg, beaten

3/4 cup avocado oil

1.5 teaspoon pink salt

1.5 teaspoon black pepper

Forager brand vegan sour cream 

Caviar (optional)

Scallions for garnish

Directions

  • Put hot cooked cauliflower on baking sheet lined with paper towels and allow to cool. Squeeze the cauliflower with hands to drain excess liquid (this is an important step.) Put the cauliflower in a bowl and add egg, arrowroot, salt and pepper, then stir together.

  • Heat 2 tablespoons of avocado oil in a pan over medium-high heat. Once heated put 2 tablespoons of the cauliflower mixture into the hot oil, press and flatten the mixture with the back of a spoon. Repeat. Fry the latkes until golden and crispy, which is about 3 minutes per side. Transfer to a wire rack to cool before serving. Repeat with the remaining avocado oil and cauliflower mixture. Top each with vegan Forager sour cream, scallions and a sprinkle of caviar and enjoy!
